Kerala Egg puffs



Kerala Egg Puffs



Ingredients
Blaetterteig (Puff pastry sheets) - 1 sheet
Boiled eggs - 3
Sliced Onion - 1
Tomato - 1
Chicken masala - 1 1/2tsp
Salt - as needed





Method

1. Boil the eggs.

2.Make the egg masala : - 
In a pan add a 1 tsp oil and when it is warm, add sliced onion and a pinch of salt & saute it. Add the chicken masala to the onion and add sliced tomatoes. cook for few more minutes. Add the boiled , halved eggs to the masala and cover it with masala.Check th salt and add accordingly. After few minutes turn off the stove and let it cool for some time. 

3.Make the puff pastery bags :-

Cut the puff pastry sheets into a small square parts. Add the eggmasala to it. Close the sheets like a cover, as in the picture. Do a egg wash over the covered sheets, if you like. Bake it at 200°C for 20 minutes. Remove it and enjoy it with a cup of coffee or a cup of masala tea.

Fried Idli


  1. Use the refrigerated /a day old idli for this recipe.
  2. Cut these idlies into wedges.
  3. Heat the oil in a pan for frying. Add idli pieces into hot oil. After some time, keep moving and turning for even browning.
  4. Once done remove and drain the excess oil. Keep them on paper towel lined plate.
  5. While it is still hot or warm, sprinkle chaat masala on top.

Version 2

  1. Use the refrigerated /a day old idli for this recipe.

  3. Sprinkle and cover these wedges with a little bit of red chilly powder & pepper powder and a pinch of salt.

Chocolate Sponge Cake

Ingredients
  • Butter (unsalted) - 2 Tbsp
  • Eggs - 4 ( room temperature)
  • Granulated sugar  - ¾ cup
  • Salt - a pinch
  • All-purpose flour - ¾ cup
  • Cocoa powder - ¼ cup
  • Baking powder - 1 ½ tsp
  • 8 inch round cake tin
Method
  1. Preheat the oven at 350°F or 175° C.
  2. Prepare the cake pan with a nonstick spray.
  3. Sift the dry ingredients ( flour, cocoa powder, baking powder) together.
  4. Melt the butter.
  5. Whisk the eggs(4 nos) with a pinch of salt until it is foamy. Add sugar a little by little to the eggs and whip for 10 to 15 minutes.
  6. Slowly add the dry flour mixture in halves to the whipped eggs mixture . Do not over mix.
  7. Add the melted butter slowly.
  8. Pour the batter to the greased baking pan.
  9. Bake for about 25 minutes or until a toothpick inserted in the middle comes out cleaner.
  10. Once the cake is baked, allow it to sit in the pan atleast for 5 more minutes and then slowly invert it onto a cooling rack.
